BREAD CRUMB GRIDDLE CAKES

1-1/2 cups dry bread crumbs                           1/2 cup sifted flour
1-1/2 cups scalded milk                                   1/2 tsp salt
2 tbsp shortening                                              4 tsp baking powder
2 eggs beaten

Soak crumbs in milk and melted shortening until soft. Add eggs and dry ingredients sifted together. Bake on hot, greased griddle. The cakes are very tender and should be turned carefully. Makes 20 cakes.
